Creamy Lemon Hummus
This high protein and healthy-fat rich dip is great for any snack or to serve as a spread on wraps, sandwiches, etc!
Yields 3-4 servings | Total Time 15 minutes
Ingredients
1 small can (15oz) chickpeas - drained and rinsed
1/4 cup ice water
3 tbsp tahini
Juice 1 large lemon - approx. 2 tbsp
1 small clove garlic
1 tsp cumin
2 tbsp high-quality olive oil + more for garnish
1/2 tsp sea salt
Paprika for garnish
Preparation
1. Add tahini, lemon juice, ice water, and salt into high speed blender or food processor. Blend until it is a smooth, thin consistency. Let sit for 2-3 min.
2. Add chickpeas to mixture and blend until completely smooth (Note: You may need to scrape down the edge a few times. For an even creamier hummus, remove the skins from the chickpeas prior to making hummus). Pour in the olive oil and blend until incorporated. Garnish with drizzle of olive oil and paprika.
3. Serve with raw or cooked vegetables, crackers or pita as well as on sandwiches, wraps, etc.
4. Store extras in the fridge for up to 4 days.
