Nutrient Packed Spinach Soup
This quick, easy, and nutrient packed soup is the perfect weeknight light meal or pair with a grain and roasted vegetables and/or preferred protein source for a hearty meal!

Ingredients
1 (5oz) bag or small container fresh spinach
2 shallots - finely chopped
2 cloves garlic - minced
2 tbsp hemp seeds
2 tbsp pumpkin seeds
1 tbsp coconut flour
1 1/2 - 2 cups water - depends on how thick/thin you want your soup — start with 1 1/2 cups
1 tbsp olive oil + more for garnish
Pinch chili flakes
Salt & pepper to taste
Preparation
Turn a medium saute pan onto medium heat and add the pumpkin seeds. Toast for 2-3 min or until slightly golden and fragrant. Set aside for garnish.
Add olive oil and the shallot, season with salt & pepper, and saute for 2-3 min or until caramelized. Add the garlic and chili flakes and saute for another min.
Add in the spinach and saute lightly until just wilted. Turn off heat.
To a high speed blender, add water and hemp seeds. Blend until smooth. Add in the spinach, shallot, and garlic and blend until smooth and season with salt & pepper.
Add in coconut flour and blend for another 5-10 sec to incorporate the two.
Transfer back to saute pan and cook for 5 min on low heat.
Adjust for seasoning and thickness.
Serve warm with drizzle of olive oil and pumpkin seeds.
