Nutrient Packed Spinach Soup

This quick, easy, and nutrient packed soup is the perfect weeknight light meal or pair with a grain and roasted vegetables and/or preferred protein source for a hearty meal!

Ingredients

  • 1 (5oz) bag or small container fresh spinach

  • 2 shallots - finely chopped

  • 2 cloves garlic - minced

  • 2 tbsp hemp seeds

  • 2 tbsp pumpkin seeds

  • 1 tbsp coconut flour

  • 1 1/2 - 2 cups water - depends on how thick/thin you want your soup — start with 1 1/2 cups

  • 1 tbsp olive oil + more for garnish

  • Pinch chili flakes

  • Salt & pepper to taste

Preparation

  1. Turn a medium saute pan onto medium heat and add the pumpkin seeds. Toast for 2-3 min or until slightly golden and fragrant. Set aside for garnish.

  2. Add olive oil and the shallot, season with salt & pepper, and saute for 2-3 min or until caramelized. Add the garlic and chili flakes and saute for another min.

  3. Add in the spinach and saute lightly until just wilted. Turn off heat.

  4. To a high speed blender, add water and hemp seeds. Blend until smooth. Add in the spinach, shallot, and garlic and blend until smooth and season with salt & pepper.

  5. Add in coconut flour and blend for another 5-10 sec to incorporate the two.

  6. Transfer back to saute pan and cook for 5 min on low heat.

  7. Adjust for seasoning and thickness.

  8. Serve warm with drizzle of olive oil and pumpkin seeds.
