Brain Boosting Vegetable Frittata

Packed in brain boosting ingredients such as pasture-raised eggs, broccoli, spinach, and avocado, this simple breakfast idea is perfect for a weekend brunch or meal prep option for the week.

Ingredients

  • 4 pasture-raised eggs

  • 1 small crown broccoli - cut into 1/2’’ florets

  • 1 cup baby bella mushrooms - thinly sliced

  • 1/2 cup cherry tomatoes - halved

  • 1 large handful fresh spinach

  • 1 avocado - thinly sliced

  • 2 tbsp extra-virgin olive oil

  • 1 handful basil

  • Salt & pepper to taste

Preparation

  1. Preheat your oven to 375F.

  2. Place a medium-sized saute pan onto medium heat and add in one tablespoon of the olive oil. When hot, add in the broccoli and mushrooms and season with salt & pepper. Saute for 3-4 minutes, or until cooked through and caramelized. Add in the spinach and cook until wilted, or about 30 seconds. Remove from the pan from the heat and transfer the vegetables to a bowl.

  3. Crack and whisk the eggs into a bowl and season with salt & pepper.

  4. Place the pan back onto medium-low heat and add in the remaining olive oil. When hot, add in the eggs and sprinkle over the cooked vegetables, followed by the halved tomatoes.

  5. Cook until the bottom of eggs begin to set, or about 2 minutes. Then, place the pan in the oven and bake for 5-7 minutes, or until the eggs are cooked through.

  6. Garnish with sliced avocado and fresh basil before serving. Pair with fresh fruit, a smoothie, or anything else of your desire for a complete breakfast.

  7. If meal prepping, store extras in the fridge for up to 4 days.
