Fall Bircher Muesli
This bircher muesli quite literally tastes like fall in a bowl! Comforting and simple to make, enjoy on a cold morning with hot milk or eat throughout the week as an ideal breakfast on the go!
Yields 3 Servings | Total Time Overnight (8hrs+)
Ingredients (Bircher Muesli)
1 cup old-fashioned oats (gluten-free if need be)
3/4 cup full-fat coconut milk (I like Whole Foods 365 brand!)
3/4 cup filtered or spring water
1 large apple, grated with a box grater
2 tbsp unsweetened raisins or currants
2 tbsp unsweetened coconut flakes
1 tsp ceylon cinnamon
Pinch sea salt
Optional: 1-2 tsp raw honey or maple syrup
Ingredients (To Serve)
1 medium banana, sliced
2 tbsp pumpkin seeds
2 tbsp hemp seeds
2 tbsp nut butter (I like almond and pistachio butter!)
Sprinkle of Ceylon cinnamon
1 cup unsweetened non-dairy milk to pour over
Preparation
In a large bowl, add all of the bircher ingredients and mix until well combined.
Transfer to an airtight container and place in the fridge overnight.
Serve up cold the next morning with your toppings. I like warming up the milk on the stovetop before pouring it over the bircher muesli!
Store any extras in the fridge for up to 4 days.
