Zucchini Hash Breakfast Bowl

Yields 4 Servings | Total Time 20 Minutes

Ingredients

  • 2 medium zucchini - finely chopped

  • 1 red bell pepper - finely chopped

  • 1 yellow bell pepper - finely chopped

  • 1/2 medium red onion - finely chopped

  • 2 tbsp + more extra-virgin olive oil

  • 4-8 pasture-raised eggs - 1-2 per person

  • 2 avocados - thinly sliced

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika

  • Salt & pepper to taste

  • Hot sauce, if desired

  • Cilantro or basil for garnish, if desired

Preparation

  1. Place a medium non-stick skillet onto medium-low heat and add in the olive oil. Add in the zucchini, bell pepper, and red onion and season with salt & pepper to taste.

  2. Saute for 4-5 minutes, or until the veggies are tender but not mushy. Add in the garlic powder and paprika and cook for another 30 seconds. Transfer the veggies to a bowl.

  3. Add in another drizzle of olive oil to the skillet and crack in the eggs, cooking until desired doneness.

  4. Serve the fried eggs over the hash and top with sliced avocado, hot sauce, and cilantro/basil, if desired.
