5 Minute Sardine Kale Salad
This salad makes the perfect no-fuss lunch packed in healthy protein, fats, and low starch veggies. Enjoy on its own for a light lunch or pair with leftover cooked grains or even some bread for a more filling meal.

Ingredients
1 head tuscan kale - thinly sliced
1 can wild-caught sardines
1 Persian cucumber - thinly sliced into half moons
1/4 cup cherry tomatoes - halved
2 tbsp sliced or slivered almonds
1 tbsp nutritional yeast
Juice of 1/2 lemon
Salt & pepper to taste
Pinch red pepper chili flakes, if desired
1/2 avocado, if desired
Preparation
Add the kale to a medium bowl along with the olive oil from the can of sardines, lemon juice, and nutritional yeast. Season with salt & pepper.
Firmly massage with your hands to breakdown the kale fully. It should be fully wilted.
Break up the sardines into a smaller pieces and add to the bowl along with the cucumber, tomato, and almonds. Mix to combine.
Serve up and enjoy. Sprinkle with red pepper chili flakes, if desired.
