5 Minute Sardine Kale Salad

This salad makes the perfect no-fuss lunch packed in healthy protein, fats, and low starch veggies. Enjoy on its own for a light lunch or pair with leftover cooked grains or even some bread for a more filling meal.

Ingredients

  • 1 head tuscan kale - thinly sliced

  • 1 can wild-caught sardines

  • 1 Persian cucumber - thinly sliced into half moons

  • 1/4 cup cherry tomatoes - halved

  • 2 tbsp sliced or slivered almonds

  • 1 tbsp nutritional yeast

  • Juice of 1/2 lemon

  • Salt & pepper to taste

  • Pinch red pepper chili flakes, if desired

  • 1/2 avocado, if desired

Preparation

  1. Add the kale to a medium bowl along with the olive oil from the can of sardines, lemon juice, and nutritional yeast. Season with salt & pepper.

  2. Firmly massage with your hands to breakdown the kale fully. It should be fully wilted.

  3. Break up the sardines into a smaller pieces and add to the bowl along with the cucumber, tomato, and almonds. Mix to combine.

  4. Serve up and enjoy. Sprinkle with red pepper chili flakes, if desired.
