Creamy Acai Smoothie Bowl
This simple recipe makes the perfect base for any smoothie bowl! I enjoy making extras and storing them in airtight containers with all the toppings for a quick breakfast on the go - simply defrost and enjoy!
Yields 2-3 servings | Total Time 15 minutes
Ingredients (Acai Bowl)
1 frozen acai packet (I love using the Sambazon or Trader Joe’s unsweetened acai packets!)
1 large frozen banana
1 cup frozen berries
1/4 cup full-fat coconut milk
Optional: 1/2 tsp cinnamon
Ingredients (Toppings)
Fresh berries or sliced banana
Nut butter
Nuts & seeds such as chopped walnuts, sliced almonds, hemp seeds, chia seeds, pumpkin seeds, shredded coconut, etc.
Note: Opt for nuts & seeds, instead of sugary granola, as it is sure to spike your blood sugar, which is not good, especially early in the morning.
Unsweetened non-dairy yogurt
Preparation
Add all ingredients to a high-speed blender and blend until completely smooth (NOTE: You may need to scrape down the edges a few times).
Garnish with toppings and enjoy!
You can even store extras in an airtight container with your toppings and store in the freezer for later use! Simply let defrost for 15-30 minutes before enjoying.
